The people behind the sausage
Susan (Carano) and Claude Cole started making sausage for family and friends over 30 years ago. After being encouraged to offer their delicious sausages for sale, Susan and Claude started exploring the viability of commercial production in 2013. They conducted a taste test with objective participants to compare their sausages to other available products in the market place. None stood up to Piemonte Sausage. In 2014, after obtaining a State of Illinois Meat Processing License, Susan and Claude began selling their sausages to local markets and chefs. After moving to their current location, they obtained a USDA grant of inspection. As fourth generation sausage and salumi makers they are continuing the fine family tradition.
Our products are made from locally sourced, all-natural pork, chicken, lamb, goat, beef and other ingredients. Many of the sausages and salumi that we produce are based on family recipes, and others are regional and seasonal favorites. Throughout the year, we produce Bernie’s Classic Sweet (Mild), Bernie’s Classic Fennel and Hot, Cantalupo, Colazione (Breakfast), two Luganeca style sausages. We also work with customers to develop and produce private label sausage and salumi.
