Bernie’s Classic Fennel and Hot is based on the classic Carano family sausage recipe and then spiced up with whole and fresh ground fennel seeds and red pepper for those who prefer their sausage robust with some heat — a taste reminiscent of the Calabria Region of Italy. It is a pork linked sausage in a natural hog casing. It is named in honor of nostro padre (our father) Bernie Carano maestro di salsicce (sausage master) and proprietario di Piemonte Market. It is a lively sausage that stands on its own grilled or makes a great accompaniment to pasta.
