Our Merguez di Capra (Merguez Goat) Sausage uses meat from the capretto (young goat) blended with the flavorful and distinctive spices of North Africa and the Mediterranean. The goats used in our sausage are raised on Central Illinois farms that emphasize pasture-based production. This sausage is stuffed in a natural sheep casing. It is an alternative to pork and can be paired with many Mediterranean and Middle Eastern dishes. (Six links in a one pound vacuum sealed package.)
