Piemonte Sausage Violino di Capra is a goat prosciutto that is hand crafted, dry cured goat leg. Violino di Capra is a Northern Italian speciality. It is flavored with a variety of savory herbs and spices and red wine. The name comes from its shape (violin) and the traditional method of slicing it for serving is by placing it under the chin with one hand while cutting it with a knife with the other – like playing a violin. Especially good for a non-pork charcutterie tray.
