Piemonte Culatello is made from the boneless, large muscle of the hind hog leg. Made in the style of tradititonal Northern Italian masters of the Po River Valley, it is dry cured and hand rubbed with herbs and spices. Cultello is a delicious alternative to Proscuitto for a tasty, lean sandwich or snack.
